Roast Tomato Soup, with Dark Opal Basil
featuring Shoots Dark Opal Basil

1kg of tomatoes

5 cloves of garlic, peeled and sliced

3T olive oil

½ red onion, sliced roughly

1C Shoots Dark Opal Basil (not chopped)


Place all ingredients in a roasting pan, cover with tinfoil, and roast at 180 degrees for 60 minutes, or until the tomatoes have collapsed.

Tip all contents of the roasting pan into food processor and blend until smooth

To strain the soup, tip the soup into a fine sieve. Using the back of a soup ladle, push the soup through the sieve using a circular rubbing action. This leaves a pulp in the sieve – discard the pulp.

Season with salt and pepper – and add dollops of fresh mozzarella cheese for a dinner party treat!

Top with some roughly chopped fresh Shoots Dark Opal Basil.
