Micromix, Quinoa and Avocado Power Salad 

featuring Shoots Micromix

1 tray Shoots Micromix

1/2C quinoa (dry uncooked)
Cherry tomatoes
Spring onions

2 cloves crushed garlic

2T Olive oil
1T red wine vinegar
Pinch of salt

1 avocado


Rinse and cook quinoa according to package directions. Cool.
Harvest the Shoots Micromix with scissors, cutting the Micromix 1-2cm from the roots. Place in a large bowl.
Halve the cherry tomatoes and slice the spring onions.  

Combine the garlic, olive oil, red wine vinegar and salt, and stir to combine.
Combine quinoa, Micromix, tomatoes and onion. Toss with dressing to combine.
Dice avocado, add to salad and lightly toss. Serve.
