Micromix Salad with Wood Roasted Salmon and Pine Nuts

featuring Shoots Micromix

1 tray of Shoots Micromix
1/4C pine nuts
200g of wood roasted salmon
Olive oil
Salt and pepper


Dry roast the pine nuts in a small pot – you don’t need to add any oil.

Watch them closely so they don’t burn and shake the pot as they start to brown. Allow to cool.
Harvest the Shoots Micromix by cutting with scissors a few centimetres from the roots.
Flake the salmon, and toss with the microgreen salad mix and pine nut.
Drizzle with olive oil, and serve with crusty fresh bread.
